fast food fri tasty TEXTURES

During our weeks of vacationing, my Fast Food Fri entires fell by the wayside. In the meantime, another month has passed and it is time to post my second entry with my photography blog circle; this months theme: TEXTURE. In a group of talented photographers who will also shoot their version of this topic, I am pushed to maximize creativity. I decided to combine the topic with my usual approach to easy, gluten-free food ideas, that are family-friendly.

Here goes it.

I love food. I love that summer brings fresh, healthy foods in abundance. I love getting my kids involved in choosing, washing, cutting and even playing with their food. They approach leisurely afternoons, like today, as a science laboratory. We look at the skin, the seed, the pits… we even had a lot of laughs as I cracked open my first coconut (thank you google for a variety of helpful techniques.) I got to do my photography shoot, and we all had a bright, juicy, crunchy meal.

   

Fruits and Veggies with some sliced meats and cheeses: a perfect summer meal. I am so happy to serve my kids foods that don’t have an ingredient list. So, so simple: carrot. grape. celery. pepper. strawberry…. no colorings or flavorings or difficult-to-pronounce-faux-anything. Simply, and naturally gluten-free. Based on Victoria’s lunch creation, I am pretty sure they had fun too.

Taco Soup

Long before Jessica Seinfeld was sneaking Spinach into brownies I was making my secret veggie-filled taco soup.

My kids are actually good about eating their veggies – squash, zucchini, broccoli, cauliflower….. there is just one family member, who shall remain nameless, that isn’t a big fan. He’s the one that I need to convince. And when I say convince, I really mean sneak and lie to. Once I got the thumbs-up approval, I admitted to all the green stuff that was hidden within the broth.

So – if you have you ever loaded up on produce only to find them still in your crisper drawer a week later…. or you live with someone who calls for pizza at the mention of Brussel sprouts, then this is the soup for you.

Fill a pot with all of the fresh and frozen vegetables in the house, simmer, blend and serve under the familiar name of TACO. And best of all, this soup is gluten-free and depending on where you stop in the cooking process, this recipe can be vegetarian / vegan / grain-free / primal / dairy-free…. need I go on?

Ingredients:

3-5 lbs. of Fresh or frozen vegetables

2 cans of diced or crushed tomatoes

32 oz Broth – chicken, beef, or vegetable

1 lb of ground turkey or lean beef

2 packets of taco seasoning (I use McCormick)

2 cans of beans (kidney or black)

2 cups of frozen corn

Here is the simple how-to:

In a large pot boil the vegetables, broth and one seasoning packet. I threw in onions and fresh garlic for flavor.

Add the tomatoes. (I added some cilantro since I has some on hand – it gave it a great, fresh taste.

 

Simmer until all the vegetables are soft.

Puree vegetables and broth in a blender.

This thick base is delicious. It could be used as the start of tomato soup, stew, or eaten all on its own. Set this aside while the meat is browning.

Brown ground turkey or beef and add water and taco seasoning according to packet directions.

Combine vegetable base and meat in one pot.

Add corn and beans.

Warm together for 15-20 minutes.

Garnish with shredded cheese, sour cream and tortilla chops.

Vegetarian: eliminate meat

Vegan: eliminate meat, cheese, sour cream

Dairy-free: eliminate cheese, sour cream

Grain-free: eliminate corn and tortilla chips

Primal: eliminate corn, beans, chips, sour cream, use minimal raw cheese


Farmers Market

On Sunday, we drove home from church, lamenting over the woes and frustrations of the week passed. Then we received a local treat to remind us to give thanks for our unique experiences. We were pleasantly surprised by a Farmers Market set up right on our street. Just yards from our door, there were animals, vendors, food and crafts. The market had never been there before and there hadn’t been any prior advertising of its arrival. Cash, camera and a sturdy bag and we were on our way.

With $25 in my pocket, we were on the hunt for fresh veggies, tastes of local fare, and Harry had big plans of bringing home a goat.

This is more of a photographic essay, but I want you to have a real sense of the experience. While we wandered the stalls, a band was playing Guantanamera over and over and over. As we went from table to table we had a little bounce in our step and sway in our hips. There were ponies, goats, chickens and pigeons, but the only kids I brought home were the 2-legged kind. Perhaps I should have left this monkey behind with the rest of the animals?

This fruit platter was the result of our purchases. The kids compared the Dragon Fruit to a kiwi – but due to the light, almost clear flesh on the inside, they felt like they were eating a jellyfish.

I love, love, LOVE getting to share differnt cultures and simple pleasures with my kids. We are so very lucky.
